This Dairy-Free Pumpkin Apple Smoothie came from a day when my cravings for pumpkin and cinnamon-apple-everything showed up at the exact same time.

Unfortunately, they arrived alongside bloating and nausea, which meant anything warm or baked was out of the question. So this smoothie became my compromise. It’s my little fusion of both cravings in one glass. 

When I wanted full-on pumpkin, I leaned into my Dairy-Free Pumpkin Pie Smoothie or my Dairy-Free Pumpkin Banana Date Smoothie. When I wanted pure apple comfort, my Dairy-Free Apple Pie Smoothie usually did the trick.

Ingredients

  • 1½ cups (360 ml) 5-Minute Rice Milk
  • 2 medium yellow apples, cored and chopped (about 2½ cups)
  • ¾ cup (180 g) unsweetened pumpkin purée (canned or homemade)
  • ½ teaspoon ground turmeric
  • 2 tablespoons ground flaxseed
  • 1 teaspoon ground cinnamon (plus extra for dusting)
  • ½–2 tablespoons honey 
  • ½ teaspoon pure vanilla extract

Preparation Instructions for Pregnancy-Friendly Pumpkin Apple Smoothie

  1. Pour the unsweetened rice milk into a blender.
  2. Add the yellow apples, pumpkin purée, ground turmeric, ground flaxseed, ground cinnamon, honey, and vanilla extract.
  3. Blend on high speed until thick, creamy, and completely smooth, about 1–2 minutes. Scrape down the sides if needed and blend again.
  4. Pour into one or two glasses.
  5. Top each serving with a dusting of ground cinnamon. Enjoy!
